Lancashire Cheese and Onion Pie With Tomato Soup
I had read a while ago about typical English foods and one of them I had not tried / heard of was a Lancashire Pie.
After a bit of googling, it turns out the Lancashire has its own typical cheeses, and in particular a cheese and onion pie that sounded yummy.
I bought some Lancashire cheese from my local cheesemonger and tried to follow this, fairly straight forward recipe:

Pretty typical pie, with basically just the cheese and simply cooked (but not browned) onions.
All in all, I thought it was pretty yummy. Not a huge effort, yet something that lets the ingredients speak for themselves.
I also made a soup to go with it: tomato passata, onion, roasted capsicum, carrot, potato, basil, spinach, oregano, smoked paprika, vege stock. Blended it all after a while with an immersion blender, added some more basil and cooked a little longer.
I’d also picked up a Garlic Ciabatta from M&S that I served with it all.
A very filling, but great winter meal for a cold day. I think everyone was pretty happy with all of it.
